My story
Pie has been a part of my life for as long as I can remember.
I had a very happy childhood with many, many happy memories, and so many of those memories involve pie in some way.
I can't begin to count the number of times my mother would pull a chair up to the counter for me to stand on so that I could "help" her make the pie dough and roll it out.
I was always in awe at the entire process: at how my mother knew instinctively just how much, or how little, to handle that fragile, magical dough, how she would skillfully roll it out to a wonderful round disk, and tenderly transfer it to the pie pan. Then came the fruit which she would put in until the pan could hold no more, and the sugar - never measured because she could just tell when she had exactly the right amount.
Back to the rolling for another beautiful round disk of dough with some vent holes skillfully and swiftly cut in; sometimes she would even spell out my name or make a design with the vent holes. I was mystified at how she could do this.
That disk tenderly covered the pie like a blanket tucking the fruit in for a nice nap.
What fascinated me most was what came next, the crimping of the edges.
My mother's hands would fly around the pie pan leaving behind a beautiful wavy edge, like a boat leaving waves behind as it glides across the water.
I could barely contain my excitement as I would wait for the pie to bake and then cool.
Eventually with Mom's guidance and patience, I learned her skills,
and I think of her with every pie that I craft.
Growing up we would have birthday pie instead of birthday cake, and of course every special meal always ended with pie!
